During this time I know everyone has been forced to eat at home more, so I thought I would share a few recipes for the crock-pot that are quick and easy.
Disclaimer: I am not a chef, just a girl who likes food!
Recipe #1 Crock-Pot Enchilada Lasagna
Ingredients-
- 1.5 ground beef or turkey
- 1 small white onion
- 1 can corn
- 2 cans of Mexican style diced tomatoes
- 1 8oz. Can of red enchilada sauce
- 1 can of black beans
- 1 jar of your favorite queso
- 1 8oz. Of sour cream
- 2 cups of shredded Mexican blend cheese
- 1 pack of flour tortillas (about 10)
- Taco packet
- Cumin
- Chili powder
- Onion Powder
- Garlic powder
- Himalayan Salt
- Pepper
Directions
Start by chopping up your onion (as much as you want, I do the whole thing), throw that in a pan with a little olive oil and garlic powder. Let that cook a little before putting in your ground meat. As it starts to brown add in a pinch of salt and pepper, onion, and garlic powder. When it is completely cooked, add in the taco seasoning packet according to directions. Then drain the corn and one can of the diced tomatoes and add it to the meat (in the pan if you’re trying to save dishes or in a separate bowl). For the cheese sauce you’re going to combine the queso, diced tomatoes, sour cream, black beans, a little chili powder, and cumin. Then for the best part, layering the lasagna! Start with a base layer of tortillas just covering the bottom, then the meat layer, and then cheese and so on. Then high for 3 hours or low for 5 and enjoy!!!
Recipe #2 Shredded Chicken Naked burrito bowls
Ingredients-
- 1 can corn
- 1 can Mexican diced tomatoes
- 1 can black beans
- 1 Packet taco seasoning
- 3 boneless skinless chicken tenderloins (frozen or thawed)
- 1 red onion
- 1 yellow pepper
- 1 green pepper
Optional-
- 1 bag or head of romaine lettuce
- Shredded Mexican blend cheese
- Chiptole dressing
- Sour cream
- Avocado
Directions-
Start by dicing your onion and peppers. Then lay the chicken tenders on the bottom of the crockpot, pour the taco seasoning on the chicken and coat it as evenly as possible. Next, dump all the cans (undrained) and the peppers and onions on top, add a little garlic powder, pepper, chili powder, and cumin. Let cook on low for 6 hours or 4 hours on high. When done shred the chicken with two forks, then serve over lettuce, top with shredded cheese and chipotle dressing or sour cream. Add a bit of avocado if you like too!
Recipe #3 Crock-Pot Taco Soup
Ingredients-
- 1 pound of ground beef or turkey
- 1 packet of taco seasoning
- 1 can of corn
- 2 cans of Mexican style diced tomatoes
- 1 can of black beans
- 1 small white onion
- 1 red, yellow, or green pepper
- 2 cups of 5-minute rice
- 1 block of cream cheese
Directions-
First, dice the onion and the peppers, add the onion to the ground meat and let it brown together with a bit of olive oil and garlic powder. Once browned add in the taco packet according to the directions. Then add all of the cans and the diced peppers to the Crock-Pot, add the meat on top. Cook on low for about 2 hours, then add in the rice and cook on high for another 2 or low for 4. When done add the softened cream cheese and stir until combined. Serve with tortilla chips, salsa, sour cream, and avocado.
Recipe #4 Beef- Stroganoff
Ingredients-
- 1 pound of ground beef
- 1 can of cream of mushroom
- 1 bag of egg noodles
- 1 small white onion
- 1 8oz sour cream
- 2 tbsp butter (I use vegan butter)
- Dried parsley
- 1 tbsp minced garlic
- Soy sauce ( or coconut aminos )
- Worcestershire Sauce
Directions-
Start by browning the ground beef. Add in the diced onion, garlic, and bit of salt and pepper. About halfway through add in about 2 tbsp of soy sauce and Worcestershire sauce. Once it is completely cooked, transfer to the Crock-Pot. Add in the cream of mushroom soup and sour cream ( I also add a bit of garlic and onion powder for some extra pizazz). Cook on low for 4 hours. When done boil the egg noodles toss in the butter and parsley flakes, serve with bread and butter and green beans.
